Malgr\u00e9 la crise du covid-19, le guide gastronomique a conserv\u00e9 ses crit\u00e8res de s\u00e9lection. Parmi la liste, un nouveau restaurant 3 \u00e9toiles, 3 ex-candidats et 1 jur\u00e9 de Top Chef et un restaurant vegan.<\/p>\n<h2>Le guide face \u00e0 la crise<\/h2>\n<p>Alors que le classement <a href=\"https:\/\/www.laliste.com\/fr\/\">La Liste<\/a> a pr\u00e9f\u00e9r\u00e9 de pas \u00e9laborer un classement des meilleurs restaurants au monde pour cause de pand\u00e9mie, le Guide Michelin n\u2019a, quant \u00e0 lui, pas chang\u00e9 sa fa\u00e7on de d\u00e9cerner ses \u00e9toiles.<\/p>\n<blockquote class=\"twitter-tweet\" data-width=\"550\" data-dnt=\"true\">\n<p lang=\"fr\" dir=\"ltr\">Nouvelle ann\u00e9e, nouvelle s\u00e9lection ! Ils \u00e9taient sur le terrain de janvier \u00e0 mars et de mai \u00e0 octobre, sans compter leur temps. Des inspecteurs internationaux sont aussi venus pr\u00eater main forte pour totaliser le m\u00eame nombre de restaurants que les autres ann\u00e9es.<\/p>\n<p>Pour lui, les restaurateurs ont su se battre pour continuer \u00e0 exercer leur profession malgr\u00e9 le contexte difficile. Leur combat a pay\u00e9 puisque 638 restaurants sont \u00e9toil\u00e9s en France, 10 de plus que l\u2019ann\u00e9e pr\u00e9c\u00e9dente. Au total, c\u2019est 1 nouveau restaurant 3 \u00e9toiles, 2 nouveaux restaurants 2 \u00e9toiles et 54 nouveaux \u00e9toil\u00e9s.<\/p>\n<h2>Top Chef bien repr\u00e9sent\u00e9 dans les nouveaux \u00e9toil\u00e9s<\/h2>\n<p>Cette ann\u00e9e, on retrouve 3 anciens candidats de l\u2019\u00e9mission <a href=\"https:\/\/www.6play.fr\/top-chef-p_872\">Top Chef<\/a> parmi la s\u00e9lection du Guide Michelin. Il s\u2019agit de Mory Sacko de la derni\u00e8re saison avec son restaurant \u00ab\u00a0Le Mosuke\u00a0\u00bb \u00e0 Paris. Il a aussi re\u00e7u le prix du \u00ab\u00a0jeune chef\u00a0de l\u2019ann\u00e9e\u00a0\u00bb, tout comme Coline Faulquier, finaliste de Top Chef en 2016 avec son restaurant \u00ab\u00a0Signature\u00a0\u00bb \u00e0 Marseille. On retrouve enfin Baptiste Renouard, candidat de la saison 10, avec son restaurant \u00ab\u00a0Ochre\u00a0\u00bb situ\u00e9 \u00e0 Rueil-Malmaison.<\/p>\n<blockquote class=\"twitter-tweet\" data-width=\"550\" data-dnt=\"true\">\n<p lang=\"fr\" dir=\"ltr\">Mory Sacko et Coline Faulquier sont nos deux Jeunes Chefs de l&#39;ann\u00e9e 2021. Un autre restaurant gastronomique d\u00e9croche, lui aussi, son deuxi\u00e8me macaron. Il s\u2019agit de \u00ab\u00a0La Merise\u00a0\u00bb, \u00e0 Laubach tenu par C\u00e9dric et Christelle Deckert. Le chef Alexandre Mazzan d\u00e9croche, quant \u00e0 lui, une troisi\u00e8me \u00e9toiles pour \u00ab\u00a0AM\u00a0\u00bb \u00e0 Marseille.<\/p>\n<p>Enfin, parmi le palmar\u00e8s du guide gastronomique, on retrouve le premier restaurant \u00e9toil\u00e9 vegan. Il s\u2019agit du \u00ab\u00a0ONA\u00a0\u00bb, acronyme de \u00ab\u00a0Origine Non Animale\u00a0\u00bb, de la cheffe Claire Vall\u00e9e en Gironde.
