A qui la faute\u00a0? Les conditions de travail\u00a0? Les salaires\u00a0? Le m\u00e9tier qui ne fait plus r\u00eaver\u00a0? La mise en place du pass sanitaire\u00a0? Tant de facteurs qui entrent en ligne de compte.<\/p>\n<h2>Difficult\u00e9 \u00e0 recruter<\/h2>\n<p>Les difficult\u00e9s de recruter \u00e9taient d\u00e9j\u00e0 pr\u00e9sentes avant la crise sanitaire, mais celle-ci a en effet accentu\u00e9 le probl\u00e8me. De nombreux salari\u00e9s, \u00e0 l\u2019arr\u00eat durant de longs mois, se sont d\u2019ailleurs remis en question : travail le soir et les week-ends, p\u00e9nibilit\u00e9 du secteur ou encore bas salaire.<\/p>\n<p>Il y aurait entre 100.000 \u00e0 120.000 emplois manquants selon les chiffres de la profession. Faute de personnel, certains restaurants et h\u00f4tels sont contraints de fermer, comme Bruno Valteau et son \u00e9pouse au <em>Lou Mistrau<\/em> \u00e0 Avignon. \u00ab\u00a0<em>On doit fermer un jour par semaine par manque de personnel pour accorder deux jours de repos au personnel restant<\/em>\u00a0\u00bb raconte le restaurateur.<\/p>\n<p>En plus de cela, la profession ne fait plus r\u00eaver, malgr\u00e9 les nombreuses \u00e9missions TV comme Top Chef. \u00ab\u00a0<em>L\u2019avenir ne s\u2019annonce pas rose car nous constatons \u00e9galement une baisse des demandes d\u2019apprentissage\u00a0\u00bb <\/em>constate la pr\u00e9sidente de l\u2019<a href=\"https:\/\/umihberry.fr\/\">Umih Berry<\/a>, V\u00e9ronique Gaulon.<\/p>\n<h2>Quelles solutions\u00a0?<\/h2>\n<p>D\u00e8s lors, quelles sont les solutions pour rendre la profession plus attirante ? Pourquoi le secteur peine-t-il \u00e0 trouver du personnel ? Pour V\u00e9ronique Gaulon, il existe plusieurs probl\u00e8mes. En premier la politique publique avec notamment l\u2019apprentissage. \u00ab <em>Depuis quarante ans, on a oppos\u00e9 l\u2019enseignement g\u00e9n\u00e9ral et professionnel, ce dernier \u00e9tant d\u00e9pr\u00e9ci\u00e9, consid\u00e9r\u00e9 comme une voie de garage.\u00a0\u00bb <\/em>d\u00e9nonce-t-elle.<\/p>\n<p>De plus, le pass sanitaire n\u2019est pas un frein au recrutement puisque la plupart des salari\u00e9s sont vaccin\u00e9s. Ces difficult\u00e9s sont connues depuis d\u00e9j\u00e0 des ann\u00e9es.<\/p>\n<p>S\u2019agit-il aussi de la question salariale\u00a0? <em>\u00ab\u00a0C\u2019est vrai, il devrait y avoir une revalorisation salariale, d\u2019autant qu\u2019avec les paiements en carte bleue, les salari\u00e9s ne re\u00e7oivent plus de pourboires. Mais comment mieux les payer avec les cotisations qui nous incombent\u00a0? D\u2019autant qu\u2019avec les fermetures dues au Covid, nos entreprises sont fragilis\u00e9es. Nous demandons donc une baisse de nos charges avec l\u2019obligation d\u2019augmenter les salaires.\u00a0\u00bb <\/em>explique la pr\u00e9sidente dans <a href=\"https:\/\/www.lanouvellerepublique.fr\/indre\/penurie-de-personnels-dans-l-indre-la-restauration-en-crise\">La Nouvelle R\u00e9publique<\/a>.<\/p>\n<p>Des journ\u00e9es sont d\u2019ailleurs organis\u00e9es par l\u2019Umih de l\u2019Ys\u00e8re pour aider le secteur \u00e0 recruter et pour revaloriser la profession. Le 22 septembre \u00e0 Grenoble et le 29 septembre \u00e0 Vienne, les \u00ab\u00a0<em>Rendez-vous des m\u00e9tiers de l\u2019h\u00f4tellerie-restauration<\/em>\u00a0\u00bb sont pr\u00e9vus pour
